He has a great knowledge of new culinary technologies and is an expert on treating food with blast chilling and shock freezing technologies.

Going so intensively round the world, as he does, and working side by side with thousands of chefs he has got a great knowledge of the main international gastronomic cultures.

He gives regularly courses and demonstrations to chefs about the correct and profitable use of blast chilling and shock freezing in the kitchen.
