Via Dante butchery shop - Walter Della Pozza

The “Macelleria di Via Dante” is located in the old quarter of Vigevano, a city famous for its beautiful central square.
It is not just a butchery shop, explains the proprietor, Walter Della Pozza. It is also a delicatessen, which for the last 14 years has specialised in producing a wide range of ready dishes and high-quality specialities.
Mr. Della Pozza has many other interests besides the “Macelleria”.
There is the catering firm, “Arteintavola”, which is widely known for its spectacular buffets characterised by incredible visual effects.
Furthermore, he works with the restaurant “Dolceacqua” in Garlasco, where he supervises the kitchen production.

 

Mr. Della Pozza originally trained as a chef at the prestigious hotelier school in Stresa on Lake Maggione.
He subsequently attended numerous courses in some of Italy’s best known schools participating amongst others in a Master’s course on Vegetable Sculpture and High Class Buffets.

He acquired further experience in both China and Japan. These experiences have enabled him to specialise in creating complex and scenographic buffets - which include many different aspects, such as fruit and vegetable sculptures, ice carvings and artistic breads - while never compromising on the flavour and appropriate combination of foods.

His career has culminated in a prestigious 2nd place in national and international artistic gastronomy competitions.


Mr. Della Pozza uses the blast chiller practically everywhere in his gastronomy and catering activities, and has found IRINOX particularly useful for his marvellous fruit and vegetable sculptures.

“If I blast chill the flowers created from fresh vegetables I can extend their life up to 12 hours, whereas in the past they wilted within an hour”, notes Mr. Della Pozza.
